I was working on my rolls yesterday, and for the most part, they came out really crisp and popping, and yet on other days they don't. Maybe it's the humidity, because I'm using the same ingredients. I guess baking is like that.
i wouldnt blame the humidity. i would blame your nervous system, your muscle memory, your brain, your caffeine level, al gore, the internet, and maybe the humidity--but i would never blame muffins.

I recommend using sour dough starter. That and a fan assisted electric oven will ensure nice crispy rolls.
