Which chords is the bouzouki girl playing? Which progressions? Which strings is she holding to make the chords? Like it?
I have a general idea of accompaniment thanks to the oaim.ie bouzouki lessons, but still can’t figure out what she’s doing.

Frances Cunningham, yes that 5 course sounds HUGE when she hits that low D. She’s played some American Old Time music with it too.

She isn’t doing anything unusual apart from the occasional "funky" rhythm. Regular chords (albeit substitution chords, which any decent player should know anyway).

Well, Jeff has said it all. And the notes on the video say it was made to be tuned DGDAD, and octave strung.
I’m not a fan of the GDAD tuning, as I’m both a melody and accompaniment player, and the stretch up to a top B is far enough already, but I can see how it works in this key for this tune.
Also, if there were more instruments playing, I would say that the accompaniment is too fussy, but as a duo it works.

While I agree that this isn’t an optimal "three rounds each" take for the set, it works in a free setting, like a duo, trio, in a small session and even on a recording (I think I’ve heard Paul Brady/Daithí Sproule/Arty McGlynn play just as "random" progressions).

An interesting thing is that she doesn’t play many identical four bar lines, and this illustrates "what can be done". A bad thing would be to learn each take as a separate version (since many lines are interchangeable), but a good thing would be simply to take mental notes, e.g.
relative minor chords work (and vice versa)
the sub-dominant may be played instead of the tonic (D instead of A, C instead of G - numerous examples above) in certain positions
a third can always be added (F# to D, C# to A)
use fixed progressions wisely (C Bm|C D|, D Bm|E A|)
don’t overuse the ii-iii-IV (V) cliché (Am Am|Bm Bm|C ….)
