Nice enough tune but it seems like a re-worked Drummond Castle https://thesession.org/tunes/2540

BTW I don’t know whether it was a deliberate mistake on the part of the composer but ‘Sherbet’ only has one R (after all, it needs the extra R to rhyme properly if you have an accent where those Rs are pronounced).

I think "Sherbert" was intentional, all of the recordings I’ve come across seem to have that spelling.

Hadn’t noticed the similarities, the A Parts definitely seems that way. The more typical setting of Herbert The Sherbert’s B Part is quite a bit different. Mawkin’s "mutated" B Part is closer to Drummond Castle’s B Part, though.

I was at college with Mawkin’s fiddle player, James de Larre. Haven’t seen him in years…

…As for the spelling, I’ve found both versions online. The version with the extra R is more pleasing to the eye - and was perhaps chosen by the composer partly out of consideration to Scots, Irish, Canadians, Americans, and those from some parts of England for whom ‘Herbert’ and ‘sherbet’ would not normally rhyme (In my SE English accent, they rhyme anyway).

The correct spelling is Herbert the Sherbet. I can only presume that people have added the extra ‘r’ for poetic symmetry.
As for it being a reworking of Drummond Castle, that isn’t a tune I’m aware of so just mere coincidence. It happens.
